Barbecue Cauliflower Tacos

1 cauliflower, cut in florets
1 cup barbecue sauce
1 red bell pepper, cut in strips
1 sweet onion, cut in 2 inch pieces
2 tablespoons extra virgin olive oil
4 low carb wraps
1 avocado, smashed with a fork
1/4 cup grape tomatoes, cut in half
1 tablespoon cilantro leaves

Preheat oven to 400F.

Toss your cauliflower florets in the barbecue sauce until they're well coated.
Spread them out on a lined baking sheet and place them in the oven for 30 minutes.
Place the peppers and onion in a pan over medium-high heat with 2 tablespoons extra virgin olive oil.

Sauté for about 15 minutes, tossing occasionally.
Remove from the heat once the onions are caramelized and the peppers have some brown marks.

Also (this is totally optional) you can use a grill pan, or actual grill if it's hand, and warm your tortillas.

Mash your avocado in a bowl and set aside.

In each tortilla, add a dollop of smashed avocado, a scoop of peppers and onions, and the barbecue cauliflower.

Top with some sliced grape tomatoes and cilantro leaves.

Drizzle with additional barbecue sauce if you want!

Weekend Recap

Good Morning Monday!

I have to say, I am quite glad to see this week.  I have a lot of great plans to get some stuff done and Monday is always a motivation for me.  I hope you had a great weekend.  I will share with you a little about how my weekend all went down.

Friday I picked Evan up at school.  Since he doesn't have quite a full day on Friday I asked him if he would like to go out for lunch and it was his pick.

Friends- he picked sushi.  Now, here is a little fun fact about me.  I don't like fish.  I don't like it one little bit, I don't like the smell of it, and I rarely cook it.  I will certainly cook it for Matt if he wants it, or if he catches fish but it just isn't my thing.  However- I want my kids to love fish.  I don't want them to ever know that I can't stand it and therefor need to hide all my gagging type reflexes when I smell something horrible.  I know- I know.  It is really good for you and it is so healthy and let me tell you.  I wish I loved fish and I tried and tried to get my act together for so many reasons.  One for health, two for my husband, and three Hello- I live in New England.  My husband traps lobster and goes deep sea fishing for shark and tuna and I just can't bring myself to want to eat it.  

So let's get back to sushi.  So of course I thought yes I will take you.  However, I can't go and order a whole bunch of sushi to try bc I do think Evan wouldn't like it just yet and I didn't want to waste it or let him see that I don't like it so we ended up going with peanut butter and jelly sushi.  

Deep down I really knew he just wanted to go to the fun sushi place at the mall where the food comes by on a conveyor and you pick off what you want.  As any four year old would love so of course I thought this would be a good first start.  

See the sushi in the back?  it just goes by and you grab and eat what you want and pay by the colored plate.  The excitement of the lunch was picking off your food so I have to say, it was a win win.

Remember how I told you I hate fish.  I ordered miso soup because I thought well, I am on the diet so I'll just have a little broth... something I can have on the diet.

I was eating it (I ate half of it) before I stopped the waiter and said, "excuse me, what exactly is miso soup" 

He replies with "oh we just boil down the fish heads, fish scales and bones, add in the tofu and chives"

I went white and told him to stop talking and take the bowl.

Why OH WHY did I think miso soup was beef broth?!?!?!?!?!??!

I threw up in my mouth and that waiter was oh so lucky I didn't let it go all over the restaurant.  He laughed and felt bad and of course took it off my bill which I said no, that wasn't necessary.  

I really thought it was beef broth.


I ordered peanut butter and jelly to after that.  WOW.  However, the boys totally loved this experience and I am so glad I took them.  We will certainly be going back and what a good bribing tool to get them to behave at the mall so mama can do a little shopping.

Side note: ryan said the peanut butter was gross and decided to eat the rice and veggies.  #totallymykid

We finished up lunch and headed over to the play place.

He stopped me and said "mom take my picture"

Such a big boy.  I remember taking him here when he was just toddling around.  Now he climbs up and jumps off the sides.  Typical boy.

Even this little guy can do the rock wall.  So impressed.

Per the usual-we hit up the lego store.

This was the highlight of their little trip.

Ending our perfect little date with some gelato. 

I carried both boys in from the car around supper and they were wiped out.

I carried Ry right up to his room, wiped him down, changed him and off to bed he went.

I let this little guy sleep a bit while I cleaned up and took a bath.

Saturday morning!

Ry just loves doing what the older boys do.  

Evan really loves soccer.  His friend Chase is on his team and he is always so excited to play.

After soccer we ran a few errands and then came back to the compound to stack a little wood and do some farm chores.

Both boys know how to help and it is awesome.

Saturday night we went to my friend Lauren's house (Chase's Mom) and had dinner and the boys played.  It was such a fun night.  We had pizza and salad and we brought cup cakes and Lauren's mom came by with some really delicious donuts from a speciality shop in Rhode Island. 

We had our own personal concert.  The boys were so cute.  I love these littles.  

Sunday morning we went to church and I had a meeting during worship so I wasn't downstairs with the kids during Sunday School.  They were working on decorating cookies - to make them look like the world.  Evan was supposed to make one for his mom but told the entire class his mom was on a diet. All the teachers including myself had a good laugh.

Strawberry Smoothie with Stonyfield

This scenario happens often: I get on a smoothie kick and I make the same one again and again and again. Same time, same place, same smoothie. Tell me that this happens to you too?
This berry-spinach combo has been on repeat in my house for awhile now. I love it because it’s easy to keep frozen berries on hand and because the spinach taste is completely hidden. It’s packed with antioxidants and other healthy things and tastes simply amazing. You could eat this as a healthy breakfast, but we also love it for dessert.

It’s also banana-less! I add a scoop of almond butter for creaminess (and a little protein) which gives it a hint of a PB&J flavor – it’s SO delicious and kid approved too.

1 cup of mixed frozen berries
1 bottle of Stonyfield Smoothie yogurt
1 tablespoon almond butter
handful of spinach
optional: 1 teaspoon acai powder

Place the frozen berries, Stonyfield Yogurt, almond butter and spinach in a blender. Add acai powder, if using. Blend until smooth, adding additional Stonyfield Yogurt as needed.  

If you want to make it fancy, turn this into a smoothie bowl.  

Then top it off with dried strawberries. 

If you can't dry them yourself you can buy them here.

Pour into two bowls and top with hemp seeds, coconut flakes, blueberries and dried strawberries.

It is so easy to add the stonyfield yogurt smoothie as an extra creaminess to any smoothie you are making.  All their flavors are delicious and organic.  #momwin

Friday Favorites

Happy Friday Friends!  Yay, I got through another week just me and the boys.  We were super busy with school and activities and the weather hasn't been so awful so we were outside quite a bit.  I am busy with soccer this weekend and a few other things but all in all I should be relaxing on Sunday and I am looking forward to it.  

Every Friday I link up with Erika, Narci, and Andrea to bring you my favorites of the week so let me get started. 


This is what my meals typically look like at night.  However, I finally discovered using parchment paper and it has changed everything.  For starters, easy clean up.. secondly- I think the food tastes better.  Is that just me? but my veggies are much tastier... Oh, and now- I add rosemary to my veggies and everything is so much better.


A simple target find that totally brings back childhood memories.  I don't know what it is but the smell of this stuff makes me think of being a teenager again.  I use this once or twice a week.  It is just a simple equalizing mask.   

It tightens up and after about 10-15 minutes I rinse it off.  I can't say for certain that I see results but I do love the feeling of having a mask on, especially one that smells so good.  


I have been making a ton of broccoli rice.  I love this as another option for my veggies at night.  I have been adding garlic and red pepper flakes.   It is so yummy.  I use the leftovers in my salads the next day.


Ya'll.  Now, don't get me wrong.  I am not being a pessimist here but I was somewhat disappointed in my weight loss this week.  Only because- now hear me out.  The first time I did this diet back when Ry was just one year old... I dropped 9 pounds the first week.  Of course, I was at my heaviest and I was also so SO SO so strict.  This time around- I am cutting corners.  I am not exactly measuring out my dairy for my coffee and if I want an extra coffee that day, I don't always make up for it in water.  However, for what I put in this week I am happy with the results.  It just will take me a bit longer to get down to my goal weight and I am ok with that.   one week - three pounds  :)


I picked up a handful of these this week at Target.  I've tried them a few times before but now I am using them nightly and man, they are working and I am loving it.  I have to say that my skin feels very inflamed right when the mask hits my skin- almost like its on fire but then it subsides and I am ready for it to come off and my skin feel so great.  I am a real believer in these products. 

So far I have tried the soothing, the acne- and just last night I did the hydrating. 


Another Target find.  I picked this up in the clearance section.  Sometimes I have to stop and think why some times brands that once were only sold at say sephora, are now selling at stores like Target.  Questions like- are these still as potent? or do they really work? I used to use this brand's moisturizer long ago... but when I saw this on the shelf I thought I'd give it a try.  I have a lot of spots that I need treatment and I have to say I use it every morning.  Although I don't see anything different yet, I am not ready to give up.


Another product I am loving is this light therapy mask.  It is so easy to use and not that expensive.  However, I wasn't impressed that I have to purchase the activator once a month but so far I haven't used more than 30.  I haven't noticed a difference but this is a favorite none the less.  I feel like I am doing something great for my skin and my spots.


Ahhhh, ice coffee.   Iced coffee is always a favorite but the organic vanilla coffee from Target is the best.  It is something to add in between your water rotation.  I have a glass here and there through the week and it satisfies that coffee craving.  I tend to drink less of it in the winter but it is a good change of pace.
