What's Up Wednesday


The last Wednesday of every month I link up with Sheaffer, Shay & Mel for What's Up Wednesday.  Every month we answer these questions...


Also- let me just say that I am so excited to be celebrating an amazing week.  We still have two weeks of summer left before school starts and we are taking full advantage.

So here we go....

What we're eating this week...

I loaded up on fresh veggies and fruits this week and we have been grilling out every day.


I made an amazing steak on the grill!!!  I think this fed us for 3 days!




What I'm reminiscing about...

A few years ago we spent our anniversary down the Cape with Evan when he was just 3 weeks old.



We are going to head back down there this year and maybe take the boat over to the Vineyard for lunch.




What I'm loving...

This Mario Badescu line is amazing.  I am loving this cleansing gel, vitamin C and face cream.


What we've been up to...

We have been soaking in the sun on our boat up on the mountains.  Just savoring these last few care free weeks before the crazy starts.


These days are the best days.



We have been having awesome weather and the sun is still hot and the water is still warm for swimming. 




What I'm dreading...

I am not working on much.  I am just enjoying family time.

Fall tv!!!

I bought her newest album and had been listening to her on repeat.

This outfit has been on repeat.  Hat, sweatshirt, tank, and sweatpants.

What else is new...
 

The only new and exciting thing for me is that I finally was able to hang up my drapes for the dining room.  I went through a big fuss about getting them the perfect length and when we were hanging them they weren't looking quite right.  I realized a few days later that the reason was because I wasn't using the circle hooks up at the top of the rod to drop down the curtain.  (see below)


So it is what it is... I probably will leave them they way that they are for a while.  I am pretty sure Matt would kill me if I asked him to drill new holes in the wall!

Roasted Strawberry Almond Meal Muffins






1 1/2 cups almond meal
1/2 cup cornmeal
1/2 tsp. baking soda
1/3 cup coconut sugar
1/4 tsp. sea salt
2 eggs
3 Tbsp. extra virgin olive oil
2 Tbsp. honey
1/2 tsp. almond extract
/2 tsp. vanilla extract
3/4 cup roasted strawberries*
1/3 cup chocolate chips, optional

Preheat the oven to 375'. Prepare a mini muffin tin with paper liners, or coat the pan generously with coconut oil.

In a large bowl, combine the almond meal, cornmeal, baking soda, coconut sugar and salt. In another bowl, whisk the eggs, olive oil, honey, almond and vanilla extracts together. Whisk it up real well until fully combined and even in color. Add the wet to the dry ingredients and stir to mix. The batter will be fairly thick. Fold in the strawberries and chocolate chips. Fill the muffin liners to the top, they don't poof too much.

Bake on the middle rack for 16-18 minutes until the tops are golden brown and a toothpick poked in the center comes out clean. Turn the muffins on their sides in the pan, or remove to a wire rack to cool. 
*Roasted Strawberries: Oven to 350'. Toss 4 cups quartered strawberries with a pinch of salt and 2 tsp. melted coconut oil (or olive oil works too). This will do for ripe, juicy berries. If yours are dry or lacking flavor, add a splash of maple or honey to sweeten. Spread them in a single layer on a parchment lined baking sheet. Roast for 25-30 minutes or until juicy and reduced in size. Set aside to cool. This may yield more than you need for the recipe. Mix the extras in plain yogurt or in your morning oatmeal.

Let's Talk: Fall Favorites


Hi Everyone!  Hope you all had a great weekend.  I am linking up with Andrea and Erika today to tell you a little bit about my fall favorites.  I LOVE LOVE LOVE fall.  I used to say (before having kids) fall was my favorite time of year. 

I got married in the fall, my birthday is in the fall.  I love the smell of the crisp early mornings.  I love the warm days and cool nights.  It just overall makes me excited.  However, after fall comes winter and I strongly dislike winter.  I don't like it like I used to.  I hate to travel in it.  I don't like the short days.  I do not like being cold.  There is so much more but lets just stick to happy thoughts.

Fall!


I love apple picking.  It is our favorite activity to do as a family.  I love the taste of a fresh apple from the tree.  I love making apples pies and apple crisp.  I feel so lucky to have the ability to do these activities here in New England.



We also love to go to the Big E.  It is a fair in Springfield, one of the biggest and we have a blast every year.  Evan has been every year of his life, starting at just three weeks old.





This was just last year.  Ryan's first Big E experience.







Of course we can't forget the incredible pumpkin spice latte!

Who can forget pumpkin picking and Halloween!


I love talking about fall... but I am going to go enjoy the rest of summer since we have a few weeks left here in this house!  Have a great week!
