Mother's Day

The day is coming.... where all mothers can sleep in, sip champagne all day, spend the day at the spa, maybe have a HOT coffee... maybe a little retail therapy after... combined with a mani/pedi... It is also the day where your kids are little angels... they won't make any messes for you, they won't be whining and crying and fighting with each other... they will make their own breakfast, lunch and dinner, and even clean up after themselves....... They know it is your day....

We all know that won't happen.  We never stop being mother's.... we are always on.  We have reactions and reflexes faster than any speeding bullet, hugs & kisses more powerful than any drug!  Eyes in the back of our heads, the amazing ability to find stuff out to protect who we love, and the strength to carry the weight of the world on our shoulders to keep our children safe.

We are fierce... so lets celebrate us.

But first.. lets eat.

I served this salad at my wedding... I still to this day have people tell me it was seriously the best salad they've ever eaten.  Not only was it delicious but it was so pretty. 

It added so much color to the table.  This is a must have salad for any celebration.... Especially on Mother's Day. 

    For the Salad
  • 2 cups baby spinach leaves
  • 3 cups mixed greens (or romaine lettuce)
  • 1/3 cup dried cranberries
  • 1/4 cup toasted chopped pecans
  • 1/2 cup fresh blueberries
  • 3/4 cup fresh strawberries, sliced
  • 1/3 cup feta cheese
  • For the Dressing
  • 1 T. flavorless oil
  • 1 T. honey
  • 3 T. red wine vinegar
  • 1/4 t. garlic powder
  • 1/4 t. kosher salt
  • 1/8 t. paprika
  • Pinch of cayenne pepper
  • Freshly ground black pepper to taste

In a large bowl combine all of the salad ingredients.
In a small bowl whisk together all of the dressing ingredients.
Top the salad with the dressing or serve on the side.

This salad is best if it is made the same day it is served so that the pecans stay crunchy, and the berries don't bleed on the lettuce.
